Our Pastrami Can Win any Competition
I’ll be honest. If you Love Pastrami You really shouldn’t try our pastrami. It will ruin your taste buds to the rest of the pastrami out there. We have the best Pastrami at WOOD Restaurant in Hickory. You won’t be able to eat other pastrami sandwiches or ruben sandwiches with the same enjoyment any more. You have been warned 😉
I’ve been jonesing to make pastrami for about five years now. Finally I said “the heck with it.” My first one was really tasty but a little dry. The second one was perfect in texture and moisture but was missing some flavor. It needed something. The third one- well let me tell you I can’t eat anyone else’s anymore. If there is a great one out there let me know. I do need other places to go eat pastrami. I don’t like cooking all of the time.

I start with Beef Brisket. [Just to make sure you are prepared, if your not a beef brisket fanatic you might not know there is fat in brisket. The fat is the soft kind that you can eat. (In Italy think of “lardo,” the fatty version of prosciutto.) It adds so much to the flavor.] I brine in my custom mix for 5 days in the cooler with the perfect amount of seasoning. Next I add my custom rub and Smoke the brisket in our Souther Pride Smoker for 6 hours. (I make sure to save all of the drippings.) The pastrami has to rest in the cooler overnight. Then it is sliced just right, not too thick and not too thin. Finally I heat it in our broth of drippings and chicken stock before melting the cheese over the meat. I’m actually licking my lips while describing this.
So come out and try our Pastrami Mami or Ruben! (It will ruin your palate for other pastrami ;).)
